Pecan Crusted Salmon and Spinach

INGREDIENTS

  • 1 lb salmon fillet
  • 1/2 cupchopped pecans
  • 1 bunch fresh parsley, chopped
  • To taste salt and pepper
  • As needed olive oil


Combine pecans, parsley, salt and pepper in a small bowl.

Drizzle the salmon with olive oil and season with salt and pepper.

Coat the top of the salmon with the pecan mixture and cover very well.

Place in a small pan, place the salmon and bake at 350 degrees for 20 minutes.

Sauteed spinach with onions

  • 1 bag baby spinach
  • 1 each onion, sliced
  • 2 Tbsp. garlic, minced
  • As needed olive oil

Heat a small saute pan, once pan is warm, add a small amount of olive oil. Once oil is heated add onion.

Saute lightly and add the spinach, stir  to incorporate onions and spinach. Add garlic and continue to saute.

Add salt and pepper to taste and serve.
