Smoked Turkey and Sweet Potato Gumbo
Serves 8

INGREDIENTS
- 6 ounces long grain rice
- 8 ounces hot turkey Italian sausage4 chicken breast
- 1 cup onion, chopped
- 1 cup red pepper, chopped
- 1 cup celery, chopped
- 4 each garlic cloves, minced
- ½ cup all-purpose flour
- 2 cups sweet potato, cubed
- 1 teaspoon thyme
- 1 teaspoon oregano
- 1 teaspoon sage
- 28 ounces chicken broth
- 1 can diced tomato
- 1 bay leaf
- 2 cups cooked turkey
- 1 ounce olive oil
In a pot, heat olive oil. When oil becomes hot, add onions and sauté.
Add celery, peppers and garlic. LOWER THE HEAT.
Dust vegetables with flour and mix well.
Add sausage and brown.
Add potatoes, tomatoes and stock and bring to a boil, then reduce to a simmer.
Add herbs cooked turkey and rice and cook until rice is fully cooked.
Adjust your seasonings and serve.
