CABBAGE STIR FRY

Serves 6 - 8

INGREDIENTS

  • 3tbls olive oil
  • 4 chicken breast
  • 1 celery stalk
  • 1 red bell pepper
  • 1 red onion
  • 1 yellow bell pepper
  • 1 zucchini
  • 2 minced garlic
  • 2c teriyaki sauce
  • 1/2c soy sauce
  • 1c. brown sugar
  • 2tbls. ground ginger
  • 2tbls. cayenne pepper
  • 8c  cooked rice
  • 2tbls corn starch
  • 1tbls beef base or bullion
  • granulated garlic, salt, and pepper to taste


Thinly slice all of veggies & chicken.In a bowl whisk together teriyaki, soy, beef base, brown sugar, corn starch, and remaining ginger and cayenne pepper. Season chicken w/ salt, pepper, granulated garlic, half ginger, and half cayenne pepper.

Heat oil in sauté pan or wok over high heat. Add minced garlic cloves and chicken, toss or stir constantly  (to prevent sticking) Cook 4 min

Add vegetables and cook and additional 3 minutes constantly stirring

Whisk teriyaki mixture again and stir into stir fry and allow to thicken (if desired consistency is not met mix equal parts cornstarch and water and whisk into sauce)

Season  to taste. Serve over cooked rice
 *note sauce can be made in advance and set aside*
